Fall is one of my very favorite times to get in the car, roll down the windows and drive. Either toward a fun destination for a weekend road trip, or just to see the leaves changing colors and to take in the crisp fall air in your own neighborhood. (It also usually involves me tracking down the nearest apple cider donuts). This year, more than ever, lots of people are forced to vacation closer to home, which means more time in the car than usual. I feel like you’re either team candy corn or not. There’s no in between. It’s strange, because I never loved candy corn as a kid. I always thought it was waxy and flavorless, but as I’ve gotten older I’ve started liking it more and more. (What does that say about my tastebuds?) If you guys have been following along over on Instagram, you’ve probably seen a few behind the scene snippets of some of the projects we started tackling at the new house, but before we dive head first into all of the big plans, I wanted to share our Charlotte renovation design inspiration with you!
This week is the first time that I’ve felt like Fall is really in the air. I’ve noticed the leaves in the yard starting to turn colors, my sweatshirts are getting some use more often, and I have to bundle up when I take Sophie outside in the mornings. When the evenings start getting chilly, I tend to start staying in and hibernating a little bit, which means making more dinners at home. I still don’t want to spend all night in the kitchen (because I’m trying to finish the 4th season of Love Island…let’s be honest), so finding a recipe that’s both delicious and easy to make is at the top of my list lately. This avocado & spinach pesto pasta is the perfect meal to make in between seasons when you’re having a hard time saying goodbye to Summer, but looking forward to cozy nights in too.
I’ve been VERY quiet around here and on social media lately, mostly because I’ve been exhausted (which you can read more about below). 2020 has been filled with so many things, some good and some bad, but it’s also been filled with lots of big changes for us that (seems like) happened overnight. One of the biggest things to happen this year was the 180 degree turn we made in regards to our living situation, and…spoiler alert (!!)….we bought a house! (Also, yes, Josh is really this happy about the new house, but since he’s out of town for work for a little bit longer, I definitely needed to include him too. Also, sorry Josh. Haha).
Anyone else feel like everything just blurs together when working from home? It’s like groundhog day every day lately and by the time Wednesday or Thursday rolls around I’m in the need of a midweek pick me up. Lately I’ve been reaching for this double chocolate coffee bark to perk me up. We’re talking TWO layers of chocolate, topped with chocolate covered coffee beans. Yeeeah, I know. Amazing, right? The recipe is simple to make and you can store the bark in an airtight container on the counter or at your desk to sneak a piece whenever you need a little extra push during the day.
I can definitely say that we’ve been cooking and baking A LOT at our house during quarantine. It’s been fun to re-connect in the kitchen, but sometimes you really just need to get out and grab something from your favorite restaurant in town. Luckily, they’ve kept the restaurants open for take out and we’ve splurged a few times, because it’s all about supporting local and keeping your faves in business, right?
