Mini No-Bake Pumpkin Pie CheesecakeMini No-Bake Pumpkin Pie CheesecakeWith the holidays right around the corner, I’m always on the hunt for a delicious recipe that is easy and quick to put together, but doesn’t sacrifice on taste. It’s definitely not fun (or polite!) to be the host of a party or gathering and spend the entire time in the kitchen while your guests are waiting, so I try to select menu items that are easy to make, serve, and of course, are delicious to eat too!

Today, I’m sharing a recipe for mini no-bake pumpkin pie cheesecake that check off all of those boxes and are simple enough for anyone to make! (Even those of you that think you’re kitchen challenged! No excuses!)

I really love the flavors of pumpkin during the fall and if I can find a way to incorporate them into dessert…bonus! Pumpkin + dessert = my happy place.

Mini No-Bake Pumpkin Pie CheesecakeMini No-Bake Pumpkin Pie CheesecakeI was really intrigued when I heard my friends talking about the new Dannon® Greek Yogurt Oikos® Pumpkin Pie yogurt they had found at the grocery store. I knew I had to try it! And with Thanksgiving around the corner, I wanted to create a fun (and easy dessert) that I could have ready for guests within a few minutes. So, I headed over to my local Walmart store and picked up some ingredients to make mini no-bake pumpkin pie cheesecake!

Mini No-Bake Pumpkin Pie CheesecakeHere’s what you’ll need to make your own:

  • 2 Containers of Dannon® Greek Yogurt Oikos® Pumpkin Pie
  • 1 – 8 oz. Package of Cream Cheese, softened
  • 1 Package of Keebler® Ready Crust® Mini Graham Cracker Pie Crust (6 pack)
  • 1 Can of Reddi-wip® original 13oz.
  • Crushed Pecans
  • Caramel

Mini No-Bake Pumpkin Pie CheesecakeIn a bowl, combine the package of cream cheese and the Dannon® Greek Yogurt Oikos® Pumpkin Pie yogurts together.

Mini No-Bake Pumpkin Pie CheesecakeMix well until the filling is smooth and creamy.

Mini No-Bake Pumpkin Pie CheesecakeMini No-Bake Pumpkin Pie CheesecakeOnce mixed well, place your cheesecake mixture into the Keebler® Ready Crust® Mini Graham Cracker Pie Crusts, filling until the filling meets the top of the crust.

Mini No-Bake Pumpkin Pie CheesecakeSprinkle crushed pecans onto the top of each mini pie, ensuring the top is covered. If you don’t like nuts, swap out the pecans for toffee chips instead!

Mini No-Bake Pumpkin Pie CheesecakeTop the centers of the mini cheesecakes with a dollop of Reddi-wip® original whipped cream, because what’s a cheesecake without whipped cream? An incomplete one, if you ask me!

Mini No-Bake Pumpkin Pie CheesecakeNext, drizzle the top of the cheesecakes with gooey caramel!

Mini No-Bake Pumpkin Pie CheesecakeThe only thing left to do it eat them!

They can be prepped in advance and stored in the fridge to chill before your event, but make sure to add your toppings right before serving.

This mini no-bake pumpkin pie cheesecake is super yummy, only requires 6 ingredients, and is a cinch to put together!
