Now that the finals are over and we know which teams we’ll be cheering on, it’s time to prep the menu and dive into all of the game day party prep!
I know I’ve talked about it on the blog before, but I like to share ways to keep entertaining EASY. Who wants to spend an entire day prepping stuff in the kitchen? Not me. So today, I’m sharing a super simple recipe that is oh, so yummy and will score you major points with the football fans in your life!
These crockpot salsa chicken sliders are a breeze to make and you can prep an entire baking sheet full of them at one time, which is great for a large game day party! Plus, with the benefit of using a crock pot, you can fix it and forget it…at least for a few hours 😉
I headed over to my local Walmart store to pick up some simple ingredients for these bad boys. I love using canned goods and fresh ingredients to create something that’s not only easy, but also tasty! With only a few basic (and inexpensive) items (and some that you probably already have in your pantry!), you’ll have delicious bite-sized snacks ready to go!
Here’s what you’ll need to make your own:
- 5 Small Boneless Chicken Breasts, or 3 Large Chicken Breasts
- 1 Cup Salsa
- 1 Can Hunt’s Petite Diced Tomatoes or Hunt’s Tomato Paste
- 1 Medium Onion, Chopped (Optional – I’m not an onion fan so I left mine out)
- 2 Tbsp. Taco Seasoning
- Salt
- Pepper
- 1/2 Cup Water
- Provolone or Mozarella Cheese
- Slider Buns
- Gherkin Pickles (Optional)
First, salt and pepper your chicken breasts to taste and place them into your crockpot. Sprinkle with taco seasoning.
Add the chopped onion, salsa and diced tomatoes or tomato paste. Pour the water into the bottom of your crock pot and cook on low for 5-6 hours.
Once done, remove the chicken breasts from the slow cooker and shred. (Keep the remaining tomato mixture to top your sliders!)
Slice your slider buns, and top the bottom half of your bun with your shredded chicken.
Add the tomato mixture on top and finish with a slice of cheese.
The biggest problem I usually have with the cheese on sliders is making sure that it’s ooey gooey and really melted before serving. It’s the worst having a big old piece of rubbery cheese!
So here’s a great little kitchen hack for you guys to get perfectly melted cheese on these babies. Use the boiler in your oven!
Place the bottom half of your slider (with the chicken, tomoatoes, and cheese on top) on a baking sheet and place under your broiler, set at 500 degrees. (If you want a crispy bun, go ahead and throw the tops of your buns on there too, with the top down).The benefit of using a crock pot to make these sliders, is that you can set them and forget them, but as soon as you put your pan of sliders under the broiler, you’ve gotta watch them like a hawk! The cheese will melt quickly and it can go from being perfectly melted and yummy to black and burnt in a split second. As soon as your cheese is melted and gooey (tt should only take a couple of minutes!) pull the baking sheet out and top them with the other half of the bun. Slide a mini gherkin pickle onto a toothpick and place into the center of your top bun. This will hold all of the goodness together and gives the slider a nice crunchy bite too!
Serve immediately.
It doesn’t get much yummier or easier than these crockpot salsa chicken sliders!
