I’m always on the hunt for healthy, quick, and easy dinner recipe ideas. Don’t get me wrong, I do like taking the time to prepare a fancy meal here and there, but during the week, after work, the last thing I want to do is spend hours in the kitchen slaving away over dinner. Especially with Summer here, I’d much rather be outside in the sunshine playing! Since I’m all about a yummy recipe, I figured it was only fair to share one of my very fave quick meals with you guys! (Trust me…you’ll thank me later!)
This recipe for chicken rice bowls is so easy to make, healthy, filling, delicious, and the perfect quick meal to prep in the Summer (or anytime!) when you just want to get outside!
If you haven’t seen the new Uncle Ben’s® Flavor Infusions rice packages in stores yet, be on the look out. This rice is DELISH! It’s already flavored, so there’s no need to add additional sauces or flavoring when cooking. Each grain is already infused with herbs and spices, which means you get all of that delicious flavor without any of the fuss! It’s prepped and ready in only 10 minutes too, so you’ll be in and out of the kitchen in no time! I also really love that it comes in a stand up, resealable pouch, so if you’re making 2 bowls, or 4, you only have to make as much as you need without worrying about wasting anything!
I picked up the Uncle Ben’s® Flavor Infusions rice at my local Walmart store. There are 5 different flavors to choose from. For this recipe I used the Uncle Ben’s® Flavor Infusions Roasted Chicken flavor to enhance the shredded chicken that’s already in the recipe. I can’t wait to try the Uncle Ben’s® Flavor Infusions Parmesan & Butter flavor next!
These chicken rice bowls are already super quick to make, but you can also prep your other ingredients in advance to save even more time and make the process even faster!
Here’s what you’ll need to make your own:
- 2 Cups Shredded Chicken
- 1 1/2 Cups Cooked Uncle Ben’s® Flavor Infusions rice (I used the Roasted Chicken Flavor)
- 1 Cup Shredded Cheese
- 2/3 Cup Chopped Green Onions
- 15 oz. Can Corn
- 15.25 oz. Can of Black Beans
- 4 Cups Shredded Romaine Hearts
- 1 Avocado, Sliced
- 2/3 Cup Pico de Gallo
- 1/2 Cup Chopped Cilantro
- Tortilla Strips (For Topping)
- Juice of 1 Fresh Lime
- Southwest Chipotle Dressing or Salad Dressing of Your Choice
Following the directions on the package, cook your rice. Set aside.
Heat up corn, black beans, and chicken, if desired. (You can choose to serve the ingredients in the rice bowl cold, if wanted, but I always heat mine up).
In two bowls, begin assembling the ingredients in layers. (You will be splitting the ingredients between the two bowls).
Place your shredded chicken on the bottom, and then top with the rice.
Add the cheese on top of the rice (so it gets a little melty!) and then place the black beans on top.
Add the onions and corn, and then top the bowl off with the lettuce.
Add the sliced avocado, pico de gallo, cilantro, and tortilla strips.
Pour the lime juice over the top.
Drizzle the southwest dressing over the finished bowl and serve!
You can choose to serve the chicken rice bowls in layers or you can mix all of the ingredients together to coat everything well. The choice is yours!
