This fall zucchini soup recipe is the perfect way to enjoy those chilly evenings and it’s delicious and easy too!
Last week I was sitting under palm trees on a sunny, warm beach in Maui listening to the ocean waves and this week I’m been welcomed back to reality with chilly 50 degree mornings and pumpkins galore. (I will be sharing some more details about my Maui trip soon!) Not that I’m complaining, I’m definitely team pumpkin and fall is my very favorite season of the year, but it’s still a little rough 😉
With chilly weather, comes soup season! I don’t know what it is about curling up with a warm bowl of soup that’s so comforting, but the fact that it’s also fairly quick and easy to make doesn’t hurt either! Today, I’m sharing an easy Zucchini soup recipe that is the perfect way to usher in the fall season. Creamy goodness, that’s chock full of yummy fall veggies. You won’t even know you’re eating zucchini 😉
Here’s what you’ll need to make your own:
- 3 1/2 Cups Diced Zucchini
- 1/2 Cup Chopped Celery
- 1 Cup Diced Carrots
- 1/2 Cup Diced Onion
- 1/2 Cup Butter
- 1 Tbsp. Flour
- 1 3/4 Cups Milk
- 1 (10.75 oz.) Can Condensed Cream of Mushroom Soup
- 1 1/4 Cups Water
- 2 Cubes of Chicken Bouillon
- 1/2 Cup Dry White Wine (Optional)
- 1/2 Cup Sour Cream
- Chives (Optional)
In a large stock pot, saute the zucchini, celery, carrots, onion, and butter over medium heat, until cooked through. (About 20 minutes.)
In a small mixing bowl, combine the flour and the milk. Mix until smooth. Add to the stock pot.
Cook until thickened.
Puree the thickened soup in a blender or food processor until smooth and creamy.
Return the pureed soup back to the stock pot and add the cream of mushroom soup, water, bouillon cubes, sour cream, and white wine (if using).
Simmer the soup until heated through and blended.
Top with chives and serve!
