I always loved when my mom would make it for dinner when I was growing up and I still make breakfast for dinner even now. (Because, let’s be honest, breakfast for dinner is ahhhh-mazing). I plan my vacations around which breakfast spots I want to try, and I’m the first to suggest a brunch get together with friends. To say my life revolves around breakfast is a bit of a stretch, but not too far off. If there’s a griddle involved, I’m there. And these blueberry waffles with lemon curd are no exception. Fresh blueberries take this homemade waffle batter to another level and the lemon curd….sooooooo good. They are the perfect meal to make for breakfast or brunch this weekend (or dinner, if you’re feeling crazy 😉 )

Blueberry Waffles with Lemon CurdI will warn you in advance, that the lemon curd requires some serious whisking on the stove, but it’s totally worth it. It’s dreamy. Pure. Gold.

I’m trying to figure out how many other things I can use it in, because it’s that good. Just try not to eat it all before serving it. These blueberry waffles with lemon curd (and a little bit of whipped cream) are my new fave! So much yum.

Blueberry Waffles with Lemon CurdHere’s what you’ll need to make your own:

Blueberry Waffles – 

  • 2 Eggs
  • 1/2 Cup Butter, Melted
  • 2 Cups Cake Flour
  • 3 Tbsp. Sugar
  • 1/2 Tsp. Salt
  • 1 Tsp. Baking Soda
  • 2 Tsp. Baking Powder
  • 1 3/4 Cups Buttermilk
  • 1 Cup Fresh Blueberries

Lemon Curd – 

  • 4 Egg Yolks
  • 1/2 Cup Sugar
  • 1/3 Cup Lemon Juice
  • 1/4 Cup Grated Lemon Peel
  • 1/8 Tsp. Salt
  • 6 Tbsp. Butter (Cut into Pieces)
  • 1 Tbsp. Heavy Cream
  • 1/4 Tsp. Vanilla Extract

To Make the Lemon Curd – 

Begin by simmering about 2 inches of water in a medium sized saucepan.

In a heatproof bowl, whisk together the egg yolks, sugar, lemon juice, lemon peel and salt.

Set the bowl on top of the simmering saucepan of water, making sure that the water does not touch the bottom of the bowl.

Whisk constantly, until the mixture thickens up and reaches 170 degrees.

Immediately add the butter, heavy cream, and vanilla extract. Whisk the mixture until smooth.

Place in a covered container and refrigerate until chilled.

To Make the Waffles – 

In a medium sized bowl, whisk together the flour, sugar, baking powder, baking soda, and salt. Set aside.

In another bowl, whisk together the buttermilk, butter, and eggs. Mix well.

Add the wet ingredients into the dry ingredients and mix until blended.

Add the blueberries and stir until they are mixed throughout the batter.

Using a waffle iron (I use this one), scoop batter onto a hot iron, that has been sprayed with cooking spray, and cook until crisp and brown. (Waffle irons all vary on times so make sure to check that they don’t burn!)

Serve them warm with the lemon curd, some whipped cream, and extra blueberries!
