I’m definitely more of a stay home and celebrate Valentine’s day kinda girl. I don’t love waiting hours for dinner at a restaurant, or making reservations 3 months in advance, but any excuse to make a delicious dessert to share with someone special….yep, count me in. And this one is a total winner! It’s easy to make, quick to bake, and who doesn’t love a warm cookie with a gooey center? Plus, it’s the perfect size for two! And did I mention red velvet? I have an obsession with whoopie pies. Macarons were in the spotlight for awhile there, but I’m definitely team whoopie pie. Anyone else with me? They are simple to make and filled with cream or frosting. (What’s not to love about that?) Plus, you can transform them into a fun Halloween themed dessert in a pinch too! Pumpkin…the mascot of October and the pie of choice for November. But, I have a confession to make. I hate pumpkin pie. Loathe. Maybe that’s a better word. I’ve tried to choke down a bite every single Thanksgiving and regardless, my taste buds reject it every time. I don’t get it. I like pumpkin chocolate chip cookies, pumpkin spice lattes, and anything else that the stores stock on the shelves during the month of October…but pumpkin pie? Noooope. Can’t. Do. It.

This cake is decorated to be a replica of the birthday cake that Hagrid gives to Harry for his eleventh birthday, but I did switch things up a little bit to up the ante. Instead of the traditional chocolate cake that he’s given in the book, I went with a butterbeer cake, because BUTTERBEER. No brainer there.
