I’m a huge fan of semi-homemade meals. I can remember watching Sandra Lee on the Food Network when I was younger and I still love the idea of using some store bought items and some homemade ones, to get dinner on the table quickly. With the holiday season coming up and busy schedules on the rise, getting a meal on the table that doesn’t involve going through the drive thru first, is a challenge in and of itself. Plus, when the weather gets colder outside, I crave easy, warm dinners that don’t require a lot of effort on my part. Today, I’m sharing an easy meal idea, that’s perfect for the family and also includes a recipe for easy focaccia bread sticks too!
I almost didn’t post this cake. It has flaws and wasn’t up to par with my perfectionist self, then I thought…but it tastes good! It might not look pinterest perfect, but this chocolate stout beer cake with beer frosting still deserves it’s moment. And sometimes, it’s ok to post a project with flaws. I know when I see someone else do it, it makes me feel a little more adequate. I’m not a professional cake maker, and don’t claim to be. But I love making cakes (and eating them!), and this cake is just one more notch in my cake baking experience column.

I have an obsession with whoopie pies. Macarons were in the spotlight for awhile there, but I’m definitely team whoopie pie. Anyone else with me? They are simple to make and filled with cream or frosting. (What’s not to love about that?) Plus, you can transform them into a fun Halloween themed dessert in a pinch too! Whenever fall hits, I seem to go into hibernation mode. It’s cold and all I want to do when I get home from work is to slip into cozy sweatpants, enjoy something hearty and warm for dinner, and watch one of the endless shows that I always seem to be behind on. (Maybe I just try to watch too many things? Anyone else have this problem?) The last thing I want to do, is to sit in the kitchen all night long, prepping dinner. And that’s where today’s recipe comes into play. These easy stuffed green peppers are delicious and also perfect to make in advance and freeze until you’re ready to eat them. Which means only 30 minutes for a delicious weeknight meal!
They are also perfect to prep in advance for a big dinner party or holiday entertaining that you might have coming up on your calendars. Make them on a weekend when you have some time, and pop them into the oven on the day of your event with no stress on your part!

No matter how old I get, I still love gummy worms! I sneak them into my cart at the grocery store check out, grab a bag of them at the gas station, and my fellow passengers can almost always count on them as a road trip staple. But, this month, in honor of my very favorite holiday, I figured that I’d take a stab (no Halloween pun intended) at making one of my favorite sweets. These DIY homemade gummy worms turned out even better than I planned and now I’m a convert. They are more flavorful than the store bought ones and I got to pick out my own flavors too. Plus, during the month of October, these little guys seem especially fitting! Who doesn’t love creepy, crawly, and delicious gummy worms during Halloween?!

Last week I was sitting under palm trees on a sunny, warm beach in Maui listening to the ocean waves and this week I’m been welcomed back to reality with chilly 50 degree mornings and pumpkins galore.
