Easy Breakfast Frittata RecipeI wish I could take credit for this easy breakfast frittata recipe, but my brilliant friend Cortney is a frittata genius, so I figured I’d just share her recipe with you guys instead. Why mess with a winner? 😉 All in all, this recipe takes about 20 minutes to throw together AND bake, so you have no excuses! It’s the perfect Sunday morning breakfast to make for the fam, a great option to take to brunch, or perfect for a weekly meal prep breakfast!

Easy Breakfast Frittata RecipeHere’s what you’ll need to make your own:
  • 8 Eggs
  • 1/3 Cup Milk
  • 1/4 Cup Ricotta Cheese
  • 2 Italian Sausage Links (Removed From Casing, Crumbled and Cooked Until Brown)
  • 2 Cups Spinach (Lightly Wilted in Olive Oil)
  • 1/4 Cup Julienned Sun Dried Tomatoes
  • 1/4 Cup Crumbled Goat Cheese
  • 1 Tbsp. Olive Oil
  • Garlic Powder (To Taste)
  • Salt (To Taste)
  • Pepper (To Taste)
First, place the top rack in your oven as high as possible, while still allowing room to fit your pan. Once moved, preheat the broiler to high.

Prep the sausage links and spinach, if not prepared already.

Whisk eggs, milk, ricotta cheese, garlic powder, salt, and pepper in a large bowl until combined well. Set aside.

Over medium low heat, warm a large deep heavy bottomed or cast iron skillet (I love this one!) with 1 tablespoon of olive oil.

Add the egg mixture to the pan, but DO NOT STIR.

Gently add spinach, sausage, tomatoes and goat cheese cheese.

Let the frittata cook for 2 minutes, undisturbed, then transfer the pan to the hot oven and cook for 6-8 mins under the broiler, until top is slightly browned and the eggs are not wobbly in the center.

Immediately remove from the oven and serve!
