This pumpkin rice krispy treat pie is a delicious alternative to the traditional Thanksgiving dessert and it’s easy to make too!
Pumpkin…the mascot of October and the pie of choice for November. But, I have a confession to make. I hate pumpkin pie. Loathe. Maybe that’s a better word. I’ve tried to choke down a bite every single Thanksgiving and regardless, my taste buds reject it every time. I don’t get it. I like pumpkin chocolate chip cookies, pumpkin spice lattes, and anything else that the stores stock on the shelves during the month of October…but pumpkin pie? Noooope. Can’t. Do. It.
I know I’m in a segregated group of weirdo’s, but alas, here I am. Pumpkin pie-less. Until today!
With a few simple adjustments, this pumpkin rice krispy treat pie is a solid replacement for the Thanksgiving staple. (And one I’d gladly eat instead!)
I used a store-bought graham cracker pie crust for my recipe, but you can make your own if you have a favorite. The graham cracker crust adds the perfect pairing to the rice krispy treats and also creates a great base for them too.
And, these aren’t just any regular old rice krispy treats. These are PUMPKIN rice krispy treats! Pumpkin marshmallows and pumpkin puree. I’m not messin’ around.
I love the fun twist this pumpkin rice krispy treat pie gives to the original dessert. It’s one dessert that the kids are sure to love (or anyone that doesn’t like the texture of traditional pumpkin pie.) Serve it during the month of October, or save this little baby for all of those upcoming Thanksgiving gatherings. And, if you choose to make it for both holidays, I won’t tell 😉
Here’s what you’ll need to make your own:
- 1 (8 Ounce) Bag Pumpkin Spice Marshmallows
- 5 Cups of Rice Krispy Cereal
- 3 Tbsp. Butter
- 1/4 Cup Pumpkin Puree
- 1 Graham Cracker Pie Crust
- Whipped Cream
In a medium saucepan, melt the butter.
Add the pumpkin puree to the melted butter and mix well.
Add the marshmallows and sir until completely melted and mixed well.
Stir in the rice krispy cereal and mix until completely coated with the melted marshmallow mixture.
Pour the marshmallow coated cereal into the graham cracker pie crust, and smooth it out using the back of a spoon covered with butter or cooking spray. (This will help to prevent sticking!) Make sure to fill in the entire pie crust evenly.
I like to take a little bit of extra time to really smooth out the top. This gives it that finishing “pumpkin pie” look.
That graham cracker crust gives the pumpkin rice krispy treats a bit more stability and an added crunch too! So yummy!
Allow the mixture to set and harden slightly.
Top with dollops of whipped cream and then slice!
I don’t think anyone is going to complain about an additional “pie” on the table this year, so add this pumpkin rice krispy treat pie next to the traditional one for a fun alternative.
