I don’t love waiting hours for dinner at a restaurant, or making reservations 3 months in advance, but any excuse to make a delicious dessert to share with someone special….yep, count me in. And this one is a total winner! It’s easy to make, quick to bake, and who doesn’t love a warm cookie with a gooey center? Plus, it’s the perfect size for two! And did I mention red velvet? This red velvet skillet cookie for two just might become your new fave…and for good reason!

Red Velvet Skillet Cookie for TwoHere’s what you’ll need to make your own:

  • 3 Tbsp. Butter, Softened
  • 1/4 Cup Sugar
  • 1/2 Tsp. Vanilla Extract
  • 1/2 Cup Flour
  • 3/4 Tbsp. Cocoa Powder
  • 1/4 Tsp. Baking Soda
  • 1/4 Tsp. Salt
  • 1/3 Cup Mini Chocolate Chips
  • 2 Tbsp. + 2 Tsp. Brown Sugar
  • 1/2 Large Egg (1 1/2 – 2 Tbsp.)
  • Red Gel Food Coloring
  • Vanilla Ice Cream (Optional)
  • Sprinkles (Optional)

Preheat your oven to 350 degrees.

Spray an oven safe 6.5″ or 7″ cast iron skillet with non-stick cooking spray and set aside.

In a standing mixer, cream the butter and both sugars together.

Since this is a small batch recipe for two, using only half of an egg might be a little strange, but it’s actually really easy. First, crack your egg into a bowl and whisk until bubbly. 1 large egg is about 3 tbsp, so for this recipe you’ll only need half of that, so 1 1/2 tbsp. of the egg. (If your mixture is a little too dry after adding the dry ingredients, add another 1/2 tbsp. of the egg).

Add the egg and vanilla into the bowl of the stand mixer. Add enough of the red gel food coloring, until you’ve reached the desired color. Mix on slow until combined well.

In another medium bowl, whisk together the flour, cocoa powder, baking soda, and salt until combined.

Add the dry ingredients to the butter mixture and mix on low. (If the dough is looking too dry, add another 1/2 tbsp. of the egg).

Stir in the chocolate chips, saving some to sprinkle over the top of the mixture once the dough is in the skillet.

Using a spatula, place the dough into the greased skillet and spread it out evenly.

Sprinkle the top with the remaining chocolate chips.

Bake for 20 minutes, or until the center is almost set. You still want it to be a little bit gooey in the middle!
