I don’t think there’s ever a bad time of year for ice cream. Sure, the weather cools down and you may not want to be eating a cone outside, but the right scoop of ice cream paired with some warm apple pie or on top of a warm brownie can really hit the spot during the winter months! This chai tea ice cream recipe is easy to make and is the perfect fall treat with all of those spicy chai flavors. (I especially love crumbling up some biscoff cookies to add on top too!) Switch up your normal cup of chai tea and try it in a bowl this year!
Pumpkin Rice Krispy Treat Pie
This pumpkin rice krispy treat pie is a delicious alternative to the traditional Thanksgiving dessert and it’s easy to make too!
Pumpkin…the mascot of October and the pie of choice for November. But, I have a confession to make. I hate pumpkin pie. Loathe. Maybe that’s a better word. I’ve tried to choke down a bite every single Thanksgiving and regardless, my taste buds reject it every time. I don’t get it. I like pumpkin chocolate chip cookies, pumpkin spice lattes, and anything else that the stores stock on the shelves during the month of October…but pumpkin pie? Noooope. Can’t. Do. It.
I know I’m in a segregated group of weirdo’s, but alas, here I am. Pumpkin pie-less. Until today!
With a few simple adjustments, this pumpkin rice krispy treat pie is a solid replacement for the Thanksgiving staple. (And one I’d gladly eat instead!)

With the holidays right around the corner, I’m always on the hunt for a delicious recipe that is easy and quick to put together, but doesn’t sacrifice on taste. It’s definitely not fun (or polite!) to be the host of a party or gathering and spend the entire time in the kitchen while your guests are waiting, so I try to select menu items that are easy to make, serve, and of course, are delicious to eat too!
Today, I’m sharing a recipe for mini no-bake pumpkin pie cheesecake that check off all of those boxes and are simple enough for anyone to make! (Even those of you that think you’re kitchen challenged! No excuses!)
