I’m getting soooo excited for warmer weather guys! It was finally warm enough to get outside and go hiking yesterday and it made me daydream about all of the other adventures I can start planning for the next few months. I’m on a mission to really get out and explore Utah this Summer and I’m itching to get things crossed off of the bucket list! Outdoor parties, days by the pool, and summer dinners on the patio! Which brings me to another thing that I’m looking forward to with warmer weather…fresh produce! With Easter around the corner, I wanted to share some tips to create your own easy Spring crudité platter, using fresh produce! So pretty, so colorful and very, very easy to put together too!

Whenever fall hits, I seem to go into hibernation mode. It’s cold and all I want to do when I get home from work is to slip into cozy sweatpants, enjoy something hearty and warm for dinner, and watch one of the endless shows that I always seem to be behind on. (Maybe I just try to watch too many things? Anyone else have this problem?) The last thing I want to do, is to sit in the kitchen all night long, prepping dinner. And that’s where today’s recipe comes into play. These easy stuffed green peppers are delicious and also perfect to make in advance and freeze until you’re ready to eat them. Which means only 30 minutes for a delicious weeknight meal!
They are also perfect to prep in advance for a big dinner party or holiday entertaining that you might have coming up on your calendars. Make them on a weekend when you have some time, and pop them into the oven on the day of your event with no stress on your part!

Last week I was sitting under palm trees on a sunny, warm beach in Maui listening to the ocean waves and this week I’m been welcomed back to reality with chilly 50 degree mornings and pumpkins galore. (I will be sharing some more details about my Maui trip soon!) Not that I’m complaining, I’m definitely team pumpkin and fall is my very favorite season of the year, but it’s still a little rough 😉
